Banana Nut Bread | Recipe

While bananas always seems like a good choice for a quick and easy fruit to grab on the go, they often ripen too quickly and end up going to waste. Well, lucky for us, the husband loves banana pudding and banana bread so we always seem to be able to save the little guys rather than tossing them! I’ve never been too fond of bananas after eating them at halftime every single game when I was a child (likely why I’m not into oranges much either) but recently I have come to love both of my husbands favorites. So today I wanted to share this wonderful banana bread the husband made the other day as we have searched for a good recipe and tweaked a good many over the years and this one has made the cut!

Banana Nut Bread

Ingredients Method

Ingredients
  

  • 3-4 ripe bananas smashed-using a potato masher works well for this
  • 1/3 cup butter melted
  • 1 cup sugar can easily reduce to 3/4 cup if you'd like less sugar
  • 1 egg BEATEN
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 1/2 cups all purpose flour
  • 1 pinch salt
  • 1-2 cups chopped pecans optional

Method
 

  1. preheat the oven 350°F 
  2. In a large mixing bowl, (with a wooden spoon) mix butter into the mashed bananas
  3. Mix in the sugar, egg, and vanilla.
  4. Sprinkle the baking soda and salt over the mixture and mix in. 
  5. Add the flour last, then mix. 
  6. Lightly mix in most of the nuts after all ingredients mixed well.
  7. Pour mixture into a buttered (or spray with Pam) 4×8 inch loaf pan. 
  8. Top with additional nuts.
  9. Bake for 1 hour
  10. Cool on a rack
  11. Remove from pan and slice to serve

    Thank you for posting this – it's perfect timing! One of my husband's coworker's wives sent us some last week and I have been perusing recipes since. It's always good to find a tested and approved method by someone you "know." Can't wait to try it!
