Bourbon Pound Cake | Recipe

The husband rather enjoys bourbon, and has become somewhat of a collector as of late, so recently we have been dabbling with recipes that include this wonderful nectar much to his delight. Now, I won’t lie, I find the taste & smell of all such beverages to be quite strong, but this is a great guy friendly dessert to offer and would go wonderfully with some homemade vanilla ice cream this summer!

Ingredients:
1 1/2 cups butter (softened)
16oz light brown sugar (1 bag)
5 large eggs (free range are best)
5oz evaporated milk (1 can)
1/2 cup bourbon
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon vanilla extract
2 tablespoons powdered sugar (optional)

Directions:

  • Preheat oven to 325°
  • Beat butter at medium speed with electric mixer
  • Gradually add brown sugar and beat until light and creamy
  • Add eggs one at a time, beating until just blended after each one
  • Stir together evaporated milk and bourbon in a bowl
  • Stir together flour, baking powder, and salt in another bowl
  • Add flour mixture, then milk mixture to butter mixture slowly and alternating between the two
  • start and end with flour mixture
  • Beat at low speed just until blended after each addition.
  • Stir in vanilla extract.
  • Pour batter into a greased and floured bundt or bread pan
  • Bake for 1 hour and 5-10 minutes (until you can insert a wooden pick and it comes out clean)
  • Cool on a wire rack 10-15 minutes then remove form pan and place on wire rack to cool completely.
  • Dust top lightly with powdered sugar (optional) – makes it pretty for the ladies but doesn’t alter taste much ; )
  • Have a few friends over, bring to a party, and enjoy!
Since I have the coffee bar, the husband has the bar cart. After all, it’s only fair ; )
