Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breasts about 3 breasts
  • 3/4 cup hot sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp ground cayenne pepper
  • 1 tsp pepper
  • 4 sweet potatoes
  • 1 cup green onions chopped - for topping
  • 1 cup feta cheese for topping

Instructions
 

  • Lightly coat a slow cooker with nonstick spray
  • Place the chicken in the bottom of the slow cooker
  • Mix hot sauce & salt, garlic & peppers
  • Pour sauce mixture over chicken
  • Cook chicken 4-5 hours on low
  • Remove chicken & shred
  • Bake the sweet potatoes - 400 degrees F
  • Prick the sweet potatoes all over with a fork, then place them on a foil-lined baking sheet.
  • Bake until the sweet potatoes are tender, about 45 minutes to 1 hour, depending upon the size of your sweet potato.
  • Top each sweet potato with the chicken mixture, green onions & feta.
  • You can top with additional hot sauce, ranch, or blue cheese as desired in addition to or instead of green onions & feta.
